Chole Bhature

 Chole Bhature is a popular North Indian dish that is enjoyed by people of all ages. It is a combination of spicy chickpeas (chole) and deep-fried bread (bhature) that is perfect for breakfast or lunch. Ingredients:


For Chole:


1 cup dried chickpeas (soaked overnight)
2 medium-sized onions (finely chopped)
2 medium-sized tomatoes (finely chopped)
2-3 green chilies (finely chopped)
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala powder
1 tsp turmeric powder
1 tsp red chili powder
2 tbsp oil
Salt to taste



For Bhature:
2 cups all-purpose flour (maida)
1/2 cup semolina (sooji)
1/2 cup plain yogurt (dahi)
1 tsp sugar
1 tsp salt
1 tsp baking powder
1/4 tsp baking soda
Oil for deep frying



Instructions:



For Chole:
Drain the water from the soaked chickpeas and pressure cook them with 4 cups of water and salt for about 20-25 minutes or until they are cooked.
Heat oil in a pan and add cumin seeds. Once they crackle, add chopped onions and green chilies. Fry until they turn golden brown.
Add ginger-garlic paste and fry for another minute. Then, add chopped tomatoes and cook until they turn soft and mushy.
Add coriander powder, garam masala powder, turmeric powder, red chili powder, and salt. Mix well and fry for a minute.
Add the cooked chickpeas along with the water in which they were cooked. Mix well and let it simmer for 10-15 minutes on low flame.
Garnish with chopped coriander leaves and serve hot with bhature.



For Bhature:
In a mixing bowl, add all-purpose flour, semolina, sugar, salt, baking powder, and baking soda. Mix well.
Add plain yogurt and knead the dough using water as required. Knead until the dough is smooth and elastic.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Divide the dough into small balls and roll them into small circles of about 4-5 inches in diameter.
Heat oil in a deep frying pan and fry the bhature until they turn golden brown on both sides.
Drain the excess oil on a paper towel and serve hot with chole.
